The Whale 🏆

Brown Ale

The Whale is an unmistakable brown ale⏤smooth, surprisingly drinkable and packed with flavor. We layer distinctive English malts with a touch of hops to create flavors and aromas of coffee, chocolate and toasted grains. 🏆 The Whale was awarded the 2017 TAP NY Governors' Cup™ for being the best craft beer in New York State!

Strawberry Gold – Foeder Aged Golden Ale

Foeder-aged golden ale

Our foeder-aged golden ale is conditioned on local strawberries made to celebrate Lexington Co-op Markets’ 50th Anniversary! We use two strains of wild yeast to introduce a subtle funk that pairs perfectly with the bright aromas and flavors of the fruit, finishing dry with a lively carbonation. Cheers!

Singularity: A series dedicated to exploring the intricacies of the hop. Each batch is brewed with the same grain bill and yeast with a rotating hop selection. Amarillo is filled with intense, sweet citrus aroma and flavor, full of lemon, orange, and grapefruit notes.

Strawberry Milkshake IPA

Milkshake IPA

6.6% ABV

This hazy IPA is brewed with Barbe Rouge and Strata hops to accentuate the flavors and aromas of our strawberry additions. Oats and wheat lend this beer an incredibly soft mouthfeel, while the addition of lactose enhances and builds sweetness. Madagascar vanilla completes the package, making this milkshake IPA and absolute delight to drink.

Ring Modulator

German-Style Doppelbock

8.3% ABV

Ring modulation can produce a huge variety of complex sounds from simple audio sources. In a similar sense, we make this doppelbock with just a few German malts and hops to produce an incredibly rich and warming beer, full of bready, toffee, and caramel notes with a touch of sweetness. Enjoy!

Black is Beautiful

Imperial Stout

9.5% ABV

Our version of Black is Beautiful balances alcohol notes, roasted bitterness and delicious dark chocolate flavors in a velvety, warming, smooth beer. Proceeds from the sales of Black is Beautiful will be donated to The Michael Jackson Foundation (themjf.org), a grant-making organization that funds scholarship awards to Black, Indigenous, and People of Color within the brewing and distilling trades. The MJF was started in 2020 by Garrett Oliver, long-time brewmaster at Brooklyn Brewery.

Pantomime Horse

A once extinct style of beer that was thought to have been made as a gift for a royal German wedding, we have based our interpretation on the 16th century notes of the brewer. Given that no one living has ever tasted a truly historic example, P.Hose mimics the notes as closely as possible, though we leave the unintentional souring out. 2018 World Beer Cup Bronze medal winner for Historical Beer Style

Tasting Notes

Beginning with a touch of smoke, redolent of rich and sweet malts followed by a stiff bitterness of both the malts and the traditional German hops, the high gravity of this beer gives a mellow finish.

The Snow🏆

Imperial Stout

Our imperial stout balances alcohol notes, roasted bitterness and dark chocolate flavors in a warming, smooth beer perfect for a cold night by the fire. Let it warm in your glass to experience all this beer has to offer.

Loaded with deeply roasted malts for dark chocolate, molasses, caramel, and balanced out by a moderate hop and malt bitterness.

Heatrays

Barleywine

10.1% ABV

Our barleywine yields layers of English malts including Maris Otter Crystal 40 and Dark Crystal. Dry and fortified with fruity esters and a slight hop presence, this beer is a perfect compliment to short days and long nights.

Tasting Notes

Forenotes of Caramel, candied sugar, toasted marshmallow, and ripe prunes and plumes with hop characters of spice and a touch of earthiness ending in a warming finish.

Singularity Series

A Running Series of Single Hop IPA’s

The same grain bill is used in every iteration so you can fully enjoy the complexities and flavor notes of each individual hop. Singularity is a great way to enjoy a beer while learning the intricacies of a single hop varietal.

The malt base that is the same in every batch, biscuity, light bodied, and meant to showcase the characteristics of the specific hop profile and though hop characteristics will vary with each batch, they are utilized in a manner that will give each beer roughly the same IBUs but that’s where the hop similarities stop.

In our most recent installment, Singularity features the Chinook hop. A distinct hop that’s often used for IPAs, Chinook has medium intensity spice and pine characteristics, with subtle notes of grapefruit.
